Homemade Bagels Pasquale Sciarappa Favorite

NOTES : This is the one I use. - This may be the pizza crust

4 1/2 Cup All purpose GF flour
2 1/4 Cup water, Warm
2 Tbl Extra virgin olive oil
1 Tbl Yeast
1 Tbl Salt
Bagel toppings (Seeds, etc)

1) In a large mixing bowl, mix the flour and salt together with the
instant yeast and olive oil. Mix together by hand. If still too dry
mix in a little bit more warm water a Tablespoon at a time until you
have a moist dough.

2) Once you have formed the dough in the bowl, remove from the bowl
and continue to knead the dough on a cutting board or a counter top
for about 10 minutes or until the dough is smooth and firm.

3) In a large bowl, drizzle about a tablespoon of olive oil into the
bowl and then place the dough into the bowl. Cover with a lid or
saran wrap set aside and let raise for one hour.

4) After letting it rise for an hour, bring a large pot of water to a
boil. Preheat oven to 400f and position oven rack to the middle.

5) Meanwhile, remove the dough from bowl cut in half and cut each half
into three equal pieces for a total of 6.

6) Roll each piece of dough util about one inch thick. Loop the
piece of dough around and lightly pinch the ends together to create a
circle.

7) Once water is boiling add 3 bagels into the pot and boil for one
minute, flip them over and boil for another minute.

8) remove and place on a clean kitchen towel. Add the remaining
bagels to the pot of water and cook as above. Pat on favorite
toppings. (or leave plain)

9) Place onto parchment lined baking sheet and bake for 20 mins.
Remove the bagels and set aside on cooling rack.
